Pumpkin Turkey Chili

Once the weather starts turning crisp, this pumpkin turkey chili is perfect. It’s warm, hearty, and fills the kitchen with the best smells. It comes together quickly making it perfect for those busy evenings.
Ingredients
- (1-2lbs of any turkey cut, cut in chunks) Turkey - Breast -Skinless
- (1) Yellow Onion - diced
- (1) Bell Pepper - diced
- (3-6 cloves) Gralic - chopped
- (15oz) white beans
- (28 oz) tomato - diced
- (14 oz) Pumpkin puree
- (1 cup) Chicken - Bone Broth
- (2 Tbs) Chili Powder
- (2 tsp) Ground Cumin
- (optional) Cayenne pepper
- (1/2 tsp) Cinnamon
- (1 pinch) nutmeg
- (1 tsp) Salt
- (1/2 tsp) black pepper
- (Optional Toppings) Avacado, Sliced Jalapenos, Sour Cream, Greek Yogurt, Cilantro, Chedder or Cotija Cheese
Directions
- Heat the cooking oil in a large pot over medium-low heat. Add the onions, peppers and garlic with a big pinch of salt and pepper. Cook until softened, about 5 minutes.
- Add the turkey, season again, and break it up as it browns. Once cooked, stir in all the spices and let them wake up for a couple minutes. (Using leftover turkey? Just pull it into pieces, toss it in with the spices, and cook for a few minutes.)
- Stir in the pumpkin (puree or chunks), tomatoes, beans, and stock. Bring to a boil, then reduce to a gentle simmer. Cover and cook 20–30 minutes.
