Slow Roast Pork Shank
Rich and warm noodle soup with tender pork and crisp cabbage. Robust flavor with hearty ingredients. We use a cast iron dutch oven, but any oven safe pot with a lid with work.

Ingredients

  • (1 or 2) Pork - Shank
  • (1tbsp) ground/shaved ginger
  • (1tbsp) garlic
  • (1/2) cabbage
  • (1-2) carrot
  • mushrooms
  • (1/2) purple onion

Directions

  1. Preheat oven to 325.
  2. Add pork shank to the dutch oven. Add ginger, salt and garlic. Put in oven.
  3. Cook for 2.5-3 hours. While it's cooking, slice cabbage, carrots, purple onion, and mushrooms.
  4. Remove pot from oven and set shank on a cutting board. Drain some juice from the pot but leave an inch or so the in the pot. Pull apart the shank using two forks.
  5. Add veggies to the pot, close lid, and simmer on medium heat for 5 minutes. 
  6. Remove pot and mix in the pork. 
  7. Add mixture to a simple pot of ramen style noodles. Top with your favorite micro greens. We used broccoli.
